Spinach and Ricotta Stuffed Chicken Lasagna
Ingredients:
9 lasagna noodles
Then 2 boneless, skinless chicken breasts
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
Find 1 cup chopped spinach
1 teaspoon garlic powder
1 teaspoon onion powder
And 1 teaspoon dried oregano
Salt and pepper to taste
2 cups marinara sauce

Instructions:
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions. Set aside.
Season the chicken breasts with garlic powder, onion powder, dried oregano, salt, and pepper. Cook the chicken breasts in a skillet over medium heat until fully cooked. Once done, shred the chicken using two forks.

Next Steps
In a bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, chopped spinach, and shredded chicken. Mix well to create the filling.
In a baking dish, spread a thin layer of marinara sauce on the bottom.
Place three lasagna noodles on top of the marinara sauce.
Spread a generous layer of the ricotta and chicken mixture over the noodles.
Repeat the layers – noodles, sauce, ricotta and chicken mixture – until all ingredients are used, ending with a layer of marinara sauce on top.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Let the lasagna cool for a few minutes before slicing and serving.

Vegetarian Alternative – Mushroom and Spinach Lasagna:
For a vegetarian alternative to this recipe, simply substitute the chicken with a mix of sautéed mushrooms and additional chopped spinach. Follow the same steps, replacing the chicken filling with the mushroom and spinach mixture. This version of the lasagna is equally delicious and satisfying.
