Food Friday: Fall Comfort Edition

It’s giving soup season, and I am HERE for it.

There’s a reason comfort food hits harder in the fall. Tthe days get shorter, the vibes get softer, and suddenly a bowl of something warm feels like a hug. You asked for the actual recipes, not just the vibes, so here’s everything I’ve got on rotation this season, measurements and all.

Butternut Squash Soup (with a little chili crunch)

Sweet, warm, a little spicy basically fall in a bowl. I make a big batch on Sunday and live off it all week.

Ingredients

  • 1 medium butternut squash (about 3 lbs), peeled and cubed
  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 4 cups vegetable broth
  • 1/2 cup coconut milk (or heavy cream)
  • Salt and pepper to taste
  • Chili crunch, for topping

Steps

  1. Heat olive oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes.
  2. Add garlic, ginger, and cinnamon. Stir for 1 minute until fragrant.
  3. Add the cubed squash and vegetable broth. Bring to a boil, then reduce heat and simmer 25–30 minutes, until the squash is fork-tender.
  4. Blend the soup until smooth (an immersion blender is your best friend here regular blender works too, just blend in batches).
  5. Stir in the coconut milk. Season with salt and pepper.
  6. Serve hot with a spoonful of chili crunch on top. Don’t skip this part.

The Elevated Grilled Cheese

Don’t overthink it, just make it thick.

Ingredients (per sandwich)

  • 2 slices sourdough bread
  • 2–3 tbsp caramelized onions (cook 1 sliced onion low and slow in butter for 20 min, sweeten with a pinch of sugar if you want)
  • 3/4 cup sharp cheddar, shredded
  • 1 tbsp butter, softened

Steps

  1. Butter one side of each bread slice.
  2. Layer cheese, caramelized onions, then more cheese between the unbuttered sides.
  3. Heat a skillet over medium-low heat. Add the sandwich, butter-side down.
  4. Cook 3–4 minutes per side, pressing gently, until golden and the cheese is fully melted.
  5. Slice on a diagonal, obviously. It just tastes better that way.

All-Afternoon Chili

The kind that makes your whole apartment smell like a hug.

Ingredients

  • 1 lb ground beef (or plant-based crumble)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can black beans, drained
  • 1 (28 oz) can crushed tomatoes
  • 1 cup beef or vegetable broth
  • Salt and pepper to taste

Toppings: sour cream, shredded cheese, a squeeze of lime, sliced jalapeño

Steps

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in chili powder, cumin, and smoked paprika. Cook 1 minute.
  4. Add beans, crushed tomatoes, and broth. Stir to combine.
  5. Bring to a simmer, then reduce heat to low. Let it simmer uncovered for at least 1 hour (2–3 hours if you have the time. It only gets better).
  6. Season to taste. Serve with all the toppings.

Cozy Homemade Chai

Something warm in my hands at all times, that’s the vibe this season.

Ingredients (makes 2 servings)

  • 2 cups water
  • 2 cinnamon sticks
  • 4 whole cloves
  • 4 green cardamom pods, crushed
  • 1 inch fresh ginger, sliced
  • 2 black tea bags (or 2 tbsp loose black tea)
  • 1 cup milk (any kind)
  • 2 tbsp honey or sugar, to taste

Steps

  1. Combine water, cinnamon, cloves, cardamom, and ginger in a saucepan. Bring to a boil, then simmer 5 minutes.
  2. Add the tea and simmer 2 more minutes.
  3. Add the milk and bring back to a gentle simmer (don’t let it boil over it will try to).
  4. Strain into mugs, sweeten to taste, and cozy up.

Comfort food isn’t just about the food, though. It’s about slowing down long enough to actually taste it. Fall gives us permission to do that in a way summer never quite does.
