4 Unique Fall Meals for Pescatarians

Warm, seasonal, and built around fish and seafood instead of meat — four fall dinners that feel like the cozy season, plate by plate.

Fall cooking usually gets built around a pot roast or a turkey. Pescatarian fall food doesn’t have to feel like an afterthought to that — it can be just as rich, warm, and seasonal, built around brown butter, roasted squash, cider, and good fish instead.

These four recipes lean into everything that makes fall cooking comforting — slow-simmered, oven-roasted, spice-forward — while keeping seafood and plants at the center of the plate.

1. Miso-Glazed Salmon with Roasted Fall Vegetables

Sweet, salty, and done in one pan — a weeknight dinner that still feels special.

Miso-Glazed Salmon

Serves 4 · 35 minutes

Ingredients

  • 4 salmon fillets
  • 3 tbsp white miso paste
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 small butternut squash, cubed
  • 2 cups Brussels sprouts, halved
  • 2 tbsp olive oil, salt, pepper

Method

  1. Preheat oven to 425°F. Toss squash and Brussels sprouts with olive oil, salt, and pepper on a sheet pan. Roast 15 minutes.
  2. Whisk miso, honey, vinegar, and soy sauce into a glaze.
  3. Push vegetables aside, add salmon to the pan, brush generously with glaze.
  4. Roast 12–15 minutes until salmon flakes easily. Broil 1–2 minutes for a caramelized top.

2. Brown Butter Squash Risotto with Seared Scallops

The dish that makes people think you went to culinary school. It’s easier than it sounds.

Brown Butter Squash Risotto & Scallops

Serves 4 · 50 minutes

Ingredients

  • 1½ cups arborio rice
  • 4 cups warm vegetable stock
  • 1 cup roasted, mashed butternut squash
  • 4 tbsp butter, divided
  • ½ cup grated parmesan
  • ½ cup white wine
  • 1 lb large sea scallops
  • Fresh sage, salt, pepper

Method

  1. Brown 2 tbsp butter in a pan until nutty and golden; set aside.
  2. Sauté rice in 1 tbsp butter 2 minutes, deglaze with wine. Add warm stock a ladle at a time, stirring until absorbed, about 25 minutes.
  3. Stir in squash, parmesan, and brown butter. Season to taste.
  4. Pat scallops dry, sear in remaining butter with sage, 2 minutes per side.
  5. Plate risotto, top with scallops and crispy sage.

3. Spiced Lentil & Sweet Potato Stew with Crispy Feta

The one-pot, meal-prep-friendly dinner you’ll want on repeat all season.

Spiced Lentil & Sweet Potato Stew

Serves 4–6 · 45 minutes

Ingredients

  • 1½ cups red lentils, rinsed
  • 2 sweet potatoes, cubed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tbsp cumin, 1 tsp smoked paprika, 1 tsp cinnamon
  • 1 block feta, olive oil, chili flakes

Method

  1. Sauté onion and garlic, add spices and toast 1 minute.
  2. Add lentils, sweet potato, tomatoes, and broth. Simmer 25–30 minutes until thick.
  3. Broil feta block with olive oil and chili flakes 8–10 minutes until crisp and golden.
  4. Ladle stew into bowls, crumble crispy feta on top.

4. Apple Cider Braised Cod with Crispy Sage

Fall’s signature flavor, reimagined as a light, flaky dinner instead of a dessert.

Apple Cider Braised Cod

Serves 4 · 30 minutes

Ingredients

  • 4 cod fillets
  • 1½ cups apple cider
  • 1 apple, thinly sliced
  • 1 shallot, sliced
  • 2 tbsp butter
  • Fresh sage leaves, salt, pepper

Method

  1. Fry sage leaves in butter until crisp, 30 seconds; set aside.
  2. In the same pan, soften shallot and apple slices, 3 minutes.
  3. Pour in cider, bring to a simmer. Nestle cod into the pan, cover, and poach 8–10 minutes until flaky.
  4. Plate cod with apples and pan sauce, top with crispy sage.
