Steps:
- Boil a pot of salted water and cook your pasta according to the box instructions.
- Right before you drain the pasta, scoop out 1/4 cup of the pasta water and set it aside. This is liquid gold, it helps the sauce come together.
- Drain the pasta.
- In the same pot, melt the butter over medium heat. Add the garlic and cook for about 1 minute, just until it smells amazing. Don’t let it burn.
- Add the pasta back into the pot along with the parmesan and a splash of the pasta water. Stir until it gets creamy and coats the noodles.
- Add more pasta water a little at a time if it feels dry.
- Season with salt, pepper, and red pepper flakes if you like heat. Top with parsley if you have it.
Joi’s tip: Don’t skip saving the pasta water. It’s the difference between a sauce that clumps and one that’s silky.

2. One-Pan Cheesy Ground Beef Skillet (25 minutes)
This is a full meal in one pan, which means less cleanup and more time to actually sit down and eat.
What you need:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper
- Optional: cooked rice or a side of bread to serve it with

Steps:
- Heat a large skillet over medium heat. No oil needed, the beef will release its own fat.
- Add the ground beef and diced onion. Break the beef apart with a spatula as it cooks.
- Cook for about 6 to 8 minutes, until the beef is browned and the onion is soft. Drain excess grease if there’s a lot.
- Add the garlic, paprika, garlic powder, salt, and pepper. Stir and cook for 1 minute.
- Pour in the diced tomatoes and let everything simmer for 5 minutes so the flavors come together.
- Sprinkle the cheese on top, cover the skillet, and let it sit for 2 to 3 minutes until melted.
- Serve as is, over rice, or scooped up with warm bread.
Joi’s tip: This one reheats really well, so double the recipe if you want lunch for tomorrow already handled.


3. Grilled Cheese and Tomato Soup, Upgraded (20 minutes)
The classic combo, but made a little more intentional so it actually feels like self-care and not just a quick fix.
What you need for the soup:
- 1 can crushed tomatoes (28 oz)
- 1/2 cup vegetable or chicken broth
- 2 tablespoons butter
- 1/4 cup heavy cream or milk
- 1 teaspoon sugar (balances the acidity)
- Salt, pepper, and a pinch of dried basil

What you need for the grilled cheese:
- 2 slices of bread per sandwich
- 2 slices of cheese (cheddar, American, or a mix)
- Butter for the outside of the bread
Steps for the soup:
- In a pot, melt the butter over medium heat.
- Add the crushed tomatoes, broth, sugar, salt, pepper, and basil. Stir and let it simmer for 10 minutes.
- Turn off the heat and stir in the cream or milk. Taste and adjust the salt if needed.
- If you want it smooth, use an immersion blender or carefully blend in batches in a regular blender.


Steps for the grilled cheese:
- Butter one side of each bread slice.
- Place a slice butter-side down in a skillet over medium heat. Add the cheese, then top with the other slice, butter-side up.
- Cook for 2 to 3 minutes per side, pressing gently, until golden brown and the cheese is melted.
- Slice diagonally, because it just tastes better that way. Dip into the soup.
Joi’s tip: Warm your soup mug before pouring the soup in by rinsing it with hot water first. Small thing, but it keeps everything warmer longer.
