Grilled Lemon Herb Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the excess liquid.
  4. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
  5. Remove from the grill and let it rest for a few minutes before serving. You can squeeze some extra lemon juice over the chicken before serving for an extra burst of flavor.

Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for about 15 minutes, or until all the water is absorbed.
  2. Fluff the quinoa with a fork and let it cool completely.
  3. In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, red onion, and parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving. This salad can be made in advance and stored in the fridge for a few days.
